21-Day Blogging Marathon | Day 15: Something that you love cooking


While not much of a cook, over the last 2 weeks, I have been spending more time in the kitchen and trying out certain different recipes. I think most people reading this can relate! In spite of this experimentation, the one thing that remains my favorite is – cake! I have been baking cakes since my teenage years. I love the process of baking, and well, who doesn't enjoy the process of eating them? I’ve also attempted cookies, muffins and pancakes throughout these years. My attempts at cookies and muffins did not go very well, however, something I learnt and  almost perfected (where is the humility?) are pancakes.

Pancakes – the beloved breakfast option across the world! As someone who absolutely adores a big and fancy breakfast, I am a sucker for pancakes. Heavy, hearty and delicious – what’s not to love? Pair them with a glass of cold-coffee, and your day could not get better.

So, as part of this blog, I have decided to share the recipe I use for pancakes. They are eggless pancakes, and can be enjoyed by anybody.
Ingredients:
All purpose flour, powdered sugar, baking soda, baking powder, cocoa, vanilla essence, unsalted butter or ghee, milk and water

Process (for four medium sized pancakes):
  1. Take two bowls of flour, one bowl of sugar, half a tablespoon of baking powder and baking soda each, one tablespoon of cocoa powder
  2. Mix, mix, mix – for about 2 minutes
  3. Slowly add some milk to the dry ingredients while stirring the batter, so as to avoid any lumps (you may mix some water to the milk to make the pancakes lighter)
  4. Keep mixing the batter until you reach a consistency that is neither too thin nor too thick
  5. Add one tablespoon of vanilla essence and half a tablespoon of ghee (or melted butter)
  6. Whisk this batter for about 10 to 12 minutes, and then let it rest
  7. Meanwhile, pre-heat a non-stick pan on medium flame for about 10 minutes
  8. Once hot enough, add some butter to the pan and spread evenly on the surface
  9. Slowly add the pancake batter on the pan, so that it takes a round shape
  10. Let the pancake cook for about 90 to 120 seconds (the flame should be low-medium during this time, else the edges might burn)
  11. Gently flip the pancake once the top side starts to bubble
  12. Let it cook for another 30 to 40 seconds
  13. Voila! Pancakes are ready. You may pair them with honey, maple syrup, butter or fruits!
